Pinion Angle is the angle the pinion points up (relative to the ground) toward the transmission. If viewed from the side it is 10 degrees up hill toward the transmission then it has 10 degrees of pinion angle.

Pinion angle is actually a combination of driveshaft angle and pinion gear angle. When under power you would want the least amount of angle posible. This allows the most power to be delivered to the tires. Excessive angles causes power to be lost in the u-joint. the trick is finding a happy medium. Not sure of your car and setup but around 2 degrees is good and should work in center of corner as well as down the straights.
